Thanks @Lorie Salkeld!   Blend 1 cup peanut butter with 1 cup brown sugar then and 1 egg, 1 tsp baking soda and a pinch of salt,1/2 tsp vanilla and blend well. Use the beater not the whisk Place in cupcake lined muffin tins. Fill cups to 3/4. Press a hole in each with a cork, fill with choc chips and bake @ 350 for 10 min. I added more choc chips at the end and stuck them back in the oven for another minute and then swirled the choc with a toothpick. Decorated some with coconut and an eggie.
