There is consistent proximity throughout the logotype. The negative space forming the "N" makes sense with the name because looking at the logotype engages the audience when locating the "N". I also think the logotype font works well bold.

this guy (Simon Walker) is f'in ridiculous (in the best way possible). I've seen his work everywhere (fffound, various design blogs), never heard his name and ALL his design is, quite frankly, the shit. how is he not famous?

This logotype is a simple font on a slight slant heading up. The overall style is retro which gives off a traditional vibe. And for contrast, the logo uses directional, diagonal lines which are repeated behind the logotype and the dough logo mark.
