Sooo good. cut the watermellon into a cylinder and then slice it like a cake. whip up a chilled can of coconut cream (set aside the water first) with 3 tablespoons of sugar. dip the back of each slice into the cream and then into some toasted coconut or almond or granola. reassemble. cover top with remaining cream and top it all off with your choice of fruit.
